Smoky Au Gratin Potatoes

We have been experimenting with Smoked Gouda Cheese and here is a Smoky Au Gratin potato dish that brings back memories of campfire cooking.

Ingredients
  • 3 medium potatoes sliced thin
  • 1 medium onion sliced thin
  • 2 cups shredded Cheddar cheese
  • 21/2 cups shredded Smoked Gouda cheese
  • 4 tbs butter or margarine
  • 4 tbs flour
  • 1 pt Half and Half
  • 11/2 cups milk
  • 2 tsp salt
  • 1 tsp coarse ground black pepper
  • ½ tsp minced garlic
  • 21/2 qt oiled casserole dish
Instructions
  1. Light Roux:
  2. Heat butter in sauce pan on medium
  3. Add flour and stir constantly until light tan
  4. Cheese Sauce:
  5. Add Half and Half and milk to roux and stir until thickened.
  6. Add spices, Gouda cheese and 1 cup Cheddar cheese
  7. Cook on medium heat until smmoth and creamy
  8. Preheat oven to 400
  9. Cover bottom of casserole with cheese sauce
  10. Add layer of potatoes, layer of onion and layer of cheese sauce, finishing with cheese sauce
  11. Cook in center of oven at 400 for 11/2 hours or until golden and fork tender
  12. Top with remaining Cheddar cheese and return to oven till melted about 15 min
